We made it to Friday and the best part: it’s a 3-day weekend!
This past week I have been making oatmeal each morning on the stove instead of making my Baked Oatmeal Squares on Sundays to have for the entire week.
With the protein from the almond milk and egg whites, I stay fuller longer and I get the added benefits of the flaxseeds that provide healthy omega-3’s as well! This would be a great pre-run oatmeal as well for those cold mornings!
Protein Flax Oatmeal
1 cup unsweetened Almond Milk
1/2 Cup Rolled Oats
2 egg whites (sometimes I like 3!)
1 Tablespoon ground flaxseed
1 Tablespoon walnuts
1 Tablespoon brown sugar
Banana slices (or any other fruit you might like!)
Combine all ingredients in a pot (except for fruit) and cook on high until oatmeal starts to bubble. Reduce the heat and let simmer for about 3 minutes. Dish out in a bowl, add your fruit and enjoy!
