It’s been a cold (and snowy) one here in VA but we made it to the long weekend! Happy Valentine’s Day!
This week (the second week) for the Move, Nourish Believe Challenge it was all about Nourishment! This week I nourished my body with good food and lots of exercise!

This week, the daily challenges were:
Monday: Go Meatless – Skip meat today! Try vegetarian/vegan meals. I decided to try a new meatless recipe and made the Mediterranean Frittata off of the Move, Nourish, Believe web site. Mine didn’t turn out as pretty but it was still delicious!
Tuesday: TYLTW! – Take Your Lunch to Work today! I take my lunch to work every day so this was not a hard task to do! I brought some leftover Mediterranean Frittata and added sweet potatoes as a side.
Wednesday: Write it down! – Journal your food today and share your WIAW (What I ate Wednesday)with us! Keeping a food log is a great way to keep you on track of your dietary goals and to notice any patterns of where you might be able to clean up your diet or where you need to add more nutrients.
Thursday: Smoothie Day! – Happy Thirsty Thursday! Make a healthy smoothie today! I didn’t have smoothie ingredients on hand at home so instead I decided to try the Retro Blends smoothie at my gym. The menu is extensive but I chose the Mocha Mania and it was awesome! Just what I needed after an intense weight lifting and cardio session. It has the right balance of carbs, proteins and fats and the best part: ZERO SUGAR!
Friday: Go Raw Friday! I chose to make a large salad that I will be having for lunch today. It has greens, tomatoes, onions, apple slices, chia seeds, cucumbers and cannellini beans. I also will add a bit of organic Green Goddess Dressing. The last few days my stomach has not been feeling that great so I figured this salad would be a great way to reset my system. With all of the greens it will be very filling!
I have enjoyed trying the new meatless recipes and eating more whole foods.
This week, I finally was able to run through the city to do some training for the Rite Aid Cleveland Marathon! Tuesday was beautiful for a 5-mile run so I headed out and unfortunately I forgot my Garmin but that didn’t stop me! Here are some shots I took during my run:
Today I have to run 3 miles and Saturday and Sunday I have to run 5 miles each day. Next week starts speed training!
